THE FIRST BOOK

An invitation
to my table.

This book is more than a collection of recipes.

Marin d’Or tells the stories of dishes inspired by memories, travels, encounters, chance and sometimes simply a glance into the fridge. Of flavours that may seem unlikely companions at first - and surprise you for that very reason.

The 30 recipes range from elegant small dishes to fish, meat and pasta, with unexpected combinations that tell their own stories. This is about flavour, curiosity and the pleasure of trying something new, rather than Michelin stars or following every rule to the letter.

Between the recipes, you will find personal stories and Thoughts from the Kitchen - on butter, salt, wine, heat, good oil and why a recipe should never be a law.

Marin d’Or is a cookbook for people who love good food, enjoy experimenting and sometimes trust their instincts in the kitchen.

Stories. Flavour. Dishes.
And the belief that good food sometimes begins just where you stop following the rules.

MY STORY · EXCERPT

It all began with chips in a foil bag

I was about eight when my parents introduced me to Norbert Willenbacher. Back then, people called him the “medal-winning chef” - he had won a silver medal. But to me, one thing mattered most: I was allowed into his kitchen.

I stood there, watched, asked questions and remembered what I saw. And of course Norbert made chips for me. Eventually, though, he had had enough.

“If you want chips, make them yourself. You know how it’s done.”

So I made my own chips.

“My Story” in the book tells how that became a passion.

FILET DES BOIS D’OR · EXCERPT

Sometimes you simply have to trust an idea.

Some ingredients are obvious partners. Beef fillet and chanterelles are among them. There is no need to think twice.

Then came the apple.

When the idea for this dish first took shape, this was the part I doubted. Chanterelles, beef fillet - and apple? I could imagine it working. But imagining and tasting are two different things.

So I started cooking.

The full story in the book tells what changed with that first bite.

THOUGHTS FROM THE KITCHEN

THE PERSON BEHIND THE NAME

The stories are mine. The name is Adrian Morel.

Cooking, hospitality and golf have been part of my life for many years. What stays with me most is the people and the moments we share.

In Marin d’Or, I bring these memories together with my love of cooking. I experiment, combine ingredients and let myself be surprised. Some ideas work at once; others need a second attempt. That, too, is part of my story.
